We had the good fortune of connecting with Lindsie Zagiba and we’ve shared our conversation below.
Hi Lindsie, any advice for those thinking about whether to keep going or to give up?
You can’t. When you believe in something, and are passionate about it, you are either in or you’re out – 100%. On the days that I want to give up – whether its my epilepsy, feeling overwhelmed and tired from our crazy schedule, or when people think that I am blogging and creating Meal Plans just for fun. But, then I get a review from someone who my Meal Plans have helped, and it changes my attitude, helping me stay focused, knowing that what I do really helps other families, just like mine save money and eat healthier. And while my health also gives me many challenges that definitely make me want to hide in a hole somedays, it also gives me the strength that I need to keep going. That combined with my my passion for making sure no one goes hungry is what fuels the fire to keep burning even on days when I don’t feel like it.
Let’s talk shop? Tell us more about your career, what can you share with our community?
In addition to blogging, I create affordable, and healthy(ish) Meal Plans for families. My Meal Plans are made to take the stress of trying to figure out what to cook every day. The Monthly Meals Plans include a full month of planned breakfasts, lunches and dinners that are budget and kid friendly and a weekly breakdown of the menu, with grocery lists. I also create additional Meal Plans for Freezer Meals, School Lunches, Holidays and more. The amount of detail and planning that goes into each Meal Plan is what sets me apart of others. Right now, I am really excited about the Back To School Breakfast, Lunch & Dinner Meal Plan I just published. Getting to where I am today wasn’t easy, and had many challenges along the way, like my health, and moving halfway across the country. From working as a cook at daycares, to teaching cooking classes, I refined my skills and realized that I could help others along the way. I owe it all to hard work and support from my husband. In the 8 1/2 years that I have been blogging, I have learned that I was not the only one who was trying to figure out what to make for dinner every night, while sticking to a budget. When I first started blogging, my hubby was just out of Chiropractic school, and we were living with his Dad. Money was tight, so I learned how to stretch out budget by planning meals, and using up all of the leftovers to create different meals. This helped me tremendously when I worked at the daycare, and had to feed 300 kids breakfast, lunch and two snacks for $1000 a week. Working at the daycare also taught me how to sneak vegetables into foods, and create meals that kids will actually eat. While sharing the recipes and meal plans along the way, I learned a lot about web design, and how to write blog posts that people actually want to read. As someone who is so passionate about food, it blows my mind how many people in our country are facing hunger. I have taught cooking classes for Feeding America’s No Kid Hungry, volunteered at food banks, and hosted food drives to help raise awareness for hunger in my community and America. I want my Meal Plans and my blog to help families who are struggling with hunger, or their grocery budget to know that I can help.
If you had a friend visiting you, what are some of the local spots you’d want to take them around to?
There is so much to do in Colorado, I don’t even know where to start. I think that we would start with a massage and then head to Marino’s in Littleton for dinner. During her visit, we would visit Pagosa Springs, but would spend most of our time in Littleton. Corvis just opened up a new location near Southwest Plaza, so that would start our day. Downtown Littleton is always on our list of things to do when my best friend comes to town. We like to hit up Inside Scoop for an ice cream cone, and at night, we would go to Ned Kelleys.
Shoutout is all about shouting out others who you feel deserve additional recognition and exposure. Who would you like to shoutout?
I want to give this Shoutout to my husband, D.J. He has been my number one supporter from the very beginning. He has tasted every dish that I have made, and read every Meal Plan, blog post, email and social media post. He did all of this, while building his own Chiropractic office. Not only has he been there for me to support my business, and my blog, he has taken care of me, me every step of the way with my epilepsy, doing whatever he could to help me become seizure free. I cannot put into words how much I love D.J. We are best friends, and each others biggest fans. I’d also like to give a shout out to my best friend Dana who has been a huge help in creating my business, and getting it to where it is today. She has listened to all my ideas, and was that 3rd set of eyes on looking at my Meal Plans.
