We had the good fortune of connecting with MIlton and we’ve shared our conversation below.

Hi MIlton, we’d love to hear more about how you thought about starting your own business?
I decided to start my own business because, after working for the same company for over 20 years, I felt stuck in the same routine. I was tired of working for someone else and realized I needed a change. More importantly, I wanted the opportunity to really explore my full potential, challenge myself in new ways, and create something of my own. Starting this business was a way to break out of that cycle, take control of my future, and push myself to grow.

Alright, so let’s move onto what keeps you busy professionally?
We wanted to create a restaurant that my family and I could truly enjoy on any given day — a place that feels welcoming, fun, and part of our everyday lives. We chose the luchador theme because it connects to some of my favorite childhood memories with my dad. Watching luchadores together was always exciting and special, and I wanted to carry that energy, tradition, and joy into the restaurant. It’s more than just food for us — it’s about sharing those memories and creating new ones for our guests.

Let’s say your best friend was visiting the area and you wanted to show them the best time ever. Where would you take them? Give us a little itinerary – say it was a week long trip, where would you eat, drink, visit, hang out, etc.
If my best friend was visiting for a week, I’d definitely start by bringing them to eat at Nopalitos so they can enjoy our food and experience the luchador vibe. From there, I’d want to show them some of the local spots that make our area unique — maybe a hike in the Flatirons to take in the Colorado scenery, then stop by Pearl Street for good food, drinks, and people-watching.

During the week, I’d mix in a little of everything: trying out some local breweries, visiting Red Rocks Amphitheatre if there’s a show, and taking a day trip up to the mountains for fresh air and views. The idea would be to balance great food, fun local culture, and time outdoors. To me, that’s the best way to really experience what Colorado has to offer.

Who else deserves some credit and recognition?
First and foremost, I want to thank God Almighty, because without Him none of this would be possible. I also want to give a big shoutout to my wife, Dora — she believed in me and supported my dream of starting a business even when it wasn’t easy. At the time, we had a one-year-old daughter, Emily, and she still stood by me and encouraged me to take that leap. Her support and faith gave me the strength to keep going, and I’m forever grateful.
