We had the good fortune of connecting with Miranda Yenne and we’ve shared our conversation below.

Hi Miranda, what was your thought process behind starting your own business?
After taking some business classes at our local college, I realized I would learn much more about business by actually running one. I first saw bubble waffles while on a trip to Switzerland, and thought it would be fun to bring them back to the states. The combination of taking those clases and my trip lead me to starting Mira’s Waffles.

Alright, so for those in our community who might not be familiar with your business, can you tell us more?
Our product, spelt bubble waffles, is what set us apart in the food industry. Most people have never heard of them, and they are unique and delicious. We use seasonal produce and aim for more unique flavors such as earl grey and spiced pear. I am proud that we were able to start the business with almost nothing – our first carts were from IKEA! Although lugging around buky carts and non-ideal equipment has been difficult, our perseverance has allowed us to afford all we need without going into debt.

Any places to eat or things to do that you can share with our readers? If they have a friend visiting town, what are some spots they could take them to?
Monday – Breakfast at Adam’s Mountain Cafe, Explore the nearby Garden of the Gods.

Tuesday – Catch the sunrise at Gold Camp Road, Lunch at Saigon Cafe in Downtown CS. Explore the shops downtown after eating

Wednesday – Tour the Air Force Academy in the morning, then head to lunch at the Margarita at Pine Creek. In the evening, go to Hillside Gardens for live music and great beer.

Thursday – Hike the Incline in the morning and grab a Mate at the Mate Factor when finished. Walk around historic downtown Manitou Springs, and be sure to try the spring water located at different fountains around downtown!

Friday – Tour the beautiful Glen Erie Castle and then head to Yellow Mountain Tea House for delicious homemade dumplings and an authentic Chinese tea ceremony.

Saturday – Start the day at Switchback Coffee Roasters and grab a waffle from Mira’s Waffles while you are there!
In the evening, get dressed up and head to the beautiful Broadmoor Hotel to explore the ground and get a treat.
