We had the good fortune of connecting with Mitch And Raechel Robinson and we’ve shared our conversation below.
Hi Mitch and Raechel, we’d love to hear about how you approach risk and risk-taking.
We both had stable rewarding Chef positions in Breckenridge but decided we wanted to take a risk at self employment. It was risky but we have no regrets. Work/life balance is important and we now have that, for the most part. No risks; no rewards!

Let’s talk shop? Tell us more about your career, what can you share with our community?
We are a husband and wife duo, classically trained chefs and Co-Owners of “Yes Chef Trailer”. We have a collective experience of 50 plus years and have both put in time at numerous restaurants in Colorado. Our concentration before starting out on our own , included , but was not limited to, Large batch soup kitchens, breakfast, fine dining and catering for large and small conferences at Vail Resorts. We know the importance of following a strict food cost, nutritional analysis and proper cleanliness standards. We think this and our prior management experience sets us above the competition.
Our menu changes depending on the event or festival we are attending, to accommodate everyone attending. This is unique as we do not sell the same menu over and over. Our slogan is “Chef Approved Food on the Move”, which literally holds true. If we would not eat it, we do not sell it! We also pride ourselves in the cleanliness of our food trailer, with perfect scores on all health inspections.
The most problematic move from the corporate arena to our own food trailer was making that final decision to move forward; including getting the financing together and transitioning from our secluded mountain home to city living in the front range. Once that was accomplished we continued our momentum and started our first event June 23, 2023. We are very proud of our success.

Let’s say your best friend was visiting the area and you wanted to show them the best time ever. Where would you take them? Give us a little itinerary – say it was a week long trip, where would you eat, drink, visit, hang out, etc.
We might take them to a music festival where “Yes Chef Trailer” was a participant. So they could experience why we love our job! The perfect balance of work and fun! We would definitely make the drive up the Poudre canyon to The Mishawaka Amphitheater for a riverside bluegrass show! Maybe a fun Tuesday evening at the FOCO food truck rally to taste what the competitors are cooking up.
On our off days we would take them river rafting on the Colorado or Arkansas river, maybe a day of fishing and swimming on Boyd Lake or drive up to Estes Park to see the local Elk Herd.
Shoutout is all about shouting out others who you feel deserve additional recognition and exposure. Who would you like to shoutout?
We would like to recognize our former Director of Colorado Mountain College Culinary Institute, Chef Kevin Clarke, for his guidance, patience and mentorship! We met in culinary school, which is where we learned the meaning of “Yes Chef” first hand.
Our families and friends offered support and encouragement throughout this journey, and gave us the push we needed to take the leap.
