We had the good fortune of connecting with Nick Evans and we’ve shared our conversation below.

Hi Nick, how do you think about risk?
I’m a huge fan of taking moonshots. There are times in your business life when you will have opportunities that almost certainly will fail but if they do pay off, they can be huge. This could be something like applying for a TV show, pitching a book, or other big wins. Sometimes people are afraid of these opportunities because they think they will fail. And 90% of the time, that is true. But, if you can hit just a few of these throughout your career, it can completely change your business and your trajectory.

Can you open up a bit about your work and career? We’re big fans and we’d love for our community to learn more about your work.
It’s okay to be risk-averse when exploring a business. Many times as you grow a business you’ll be advised that you have to go “all-in” on it if you want to succeed. That can be true, but it doesn’t have to be true. Even though I’ve run a six-figure recipe development and writing business for the last many years, I still hold down a part-time professional job as an operations manager, working remotely. I like both opportunities and I also like that they are very different and each gives some insurance to the other which helps me provide for my family. Your success doesn’t have to look like the picture-perfect view that is sold in business magazines.

Let’s say your best friend was visiting the area and you wanted to show them the best time ever. Where would you take them? Give us a little itinerary – say it was a week long trip, where would you eat, drink, visit, hang out, etc.
This is largely dependent on what season it is, but I’d want to explore Federal a bit and take them to a good Dim Sum place (I like Star Kitchen). For a fancy dinner out, Softa is one of my favorites and serves absolutely delicious food without feeling too pretentious. If they are visiting in the summer, I’d plan a fun picnic with some sandwiches from Snarfs or Curtis Park Deli and hit up Jazz in the Park in City Park which is always a fun way to end the weekend. Getting in a hike is always high on my list and would probably take them to the flat irons in Boulder followed by a stop at Avery brewery.
If it’s soccer season, I’d bring them to a Rapids game. The Rapids are not as popular as the Rockies, but the games are SO fun and are always a party.

Who else deserves some credit and recognition?
There are so many people, but to change it up a bit, I want to give a shoutout to the most tattered book on my cookbook shelves. It’s an old book that is very possibly out of print now called The Flavor Bible by Andrew Domenburg and Karen Page. Basically it is an encyclopedia not only of food and ingredients, but also what tastes good together. Each ingredient is broken down with other ingredients that go well with it. For a recipe developer, it has been an actual gamechanger. I have probably opened its pages hundreds of times for inspiration.
