We had the good fortune of connecting with Nicole Bendig-Lamb and we’ve shared our conversation below.
Hi Nicole, why did you decide to pursue a creative path?
I have always had a passion for expressing artistic creation through food and cake art, but what made me realize that this needed to be my career is seeing the joy that it brings to others! Nothing makes me happier than to hear from my clients that my cakes have touched their hearts and created a memory that lasts a lifetime.
Alright, so let’s move onto what keeps you busy professionally?
My designs are more than “just cake.” I love to create show pieces that are delicious, but also dazzle and amaze my clients and their guests! My specialty is designing unique, and even unusual cakes. For example, I grew up completely enthralled with Science Fiction, Classic Horror and Mythology, so when someone wants a cake like that, I’ll leave no stone unturned to research every detail about the theme so that I am sure to knock it out of the park! The most ambitious cake I’ve created thus far was a bust cake of the Predator (from the 1987 Arnold Schwarzenegger movie) for my son’s 13th birthday. Seeing how happy he was made it so worth the hours and hours of time bringing it to fruition. Besides making my clients and family happy, I had the honor to compete on Food Network’s “Sugar Dome” (Season 1, Episode 4) in 2012. At the time, it was my lifelong dream and when I achieved it, I decided that I needed a NEW dream! So I focused on being able to quit my day job as an Accountant to pursue my cake passion fulltime. Now I have achieved that dream! What I would like people to know is that anything is possible with the right mindset, surrounding yourself with supportive people and doing the work! While it wasn’t necessarily “easy” to get here, it was worth every minute and now I’m living my best life.
Any places to eat or things to do that you can share with our readers? If they have a friend visiting town, what are some spots they could take them to?
One of my favorite places to take visitors to the Denver area is the Downtown Aquarium! I could literally spend hours at the large shark tank at the end of the exhibit. To stand by the glass as the huge sand tiger sharks swim right by is the coolest thing ever! Well, the Mermaids are pretty cool too! I also love to visit Red Rocks Amphitheater. The beauty of the formations is breathtaking! For dessert, one of my favorite places is Scrumptious in Olde Town Arvada. The homemade ice cream is to die for and the retro candy shop is super fun!

I have to recognize the support and encouragement that I received from my former business coach, Rebekah Allan of Australia. I met Rebekah online through her online coaching business that helped bakers and creative cake artists like me, realize their dreams of taking it from a hobby to a business. With her courses and coaching, I was able to set the goal and ultimately achieve quitting my “day job” and going fulltime with my cake art! Shortly after I met this goal, Rebekah reached out to me to ask if I would be interested in taking over her online cake coaching business as she was ready to branch out into other business coaching niches. I am now not only creating cakes as my fulltime career with Snarky Sweet Cake Chick, LLC, but also teaching others to achieve that same dream as the new owner of Cake Business School, LLC.
