We had the good fortune of connecting with Niki O’Connor and we’ve shared our conversation below.

Hi Niki, we’d love to hear more about your end-goal, professionally.
I would definitely like to be working in a bakery, but the dream would be to own my own bakery. My focus would still be on donuts but I know I’m going to use most of my free time trying to educate myself and learn as many things as possible so I can expand.

Can you give our readers an introduction to your business? Maybe you can share a bit about what you do and what sets you apart from others?
Kneadful Rings is run out of my own home kitchen and I make miniature baked cake donuts. We are different because we exclusively sell small-sized donuts so you can try multiple flavors! Any time I purchase donuts, I buy many so I can try all of the different kinds, but they end up so large that I waste a lot of them as I’m usually eating them by myself. My donuts allow you to try a few different flavors because they’re only about 2″ in diameter. I’m proud and excited that they look so nice when they are decorated and that I have been asked to do a few weddings. It’s so important to do a good job for someone’s speccial day and I’m honored I’ve been asked to provid ethe baked goods! The hardest part of this endeavor is that I currently do most everything all by myself (my husband does help me though!) and to overcome these challenges, I’ve had to work hard on time management and my order of operations. Our brand is creepy fun: lots of brightly colored skulls or a raven holding a donut. The name is a pun from Stephen King’s book: Needful Things.

Let’s say your best friend was visiting the area and you wanted to show them the best time ever. Where would you take them? Give us a little itinerary – say it was a week long trip, where would you eat, drink, visit, hang out, etc.
I have to give some love to Cannonball Creek Brewing Company where I work full time, because not only do I love working there, but I love the beer we make. I’m extrememly proud and honored to work where the beer is fantastic and the people are equally as great.

Habit Donut Dispnsary is one of my favorite local donut shops. Delicious brioche donuts and some great flavors! They’re attached to an awesome cafe called Carbon which has everything from beer to coffee to tea to cocktails and a great brunch. Two amazing places in one!

Red Rocks: It might be cliche but if I had a friend that had never been there, I would take them. Hopefully for an actual concert, but the hike is beautiful too.

Wolf’s Tailor is such a hidden gem. It’s definitely an higher end, finer dining expereince, but totally worth it. It has almost a speak easy like entrance through their garden. The food and drinks are incredible and the menu is set, so you’re always surprised by what they bring you!

Who else deserves some credit and recognition?
My Husband, Rob O’Connor. He has been my biggest supporter for anything I pursue and has always helped me however he can. He’s also my dishwasher, delivery person, taste tester, and business partner!
