We had the good fortune of connecting with Shannon Weston and we’ve shared our conversation below.

Hi Shannon, one of the most rewarding things about getting to know so many entrepreneurs and creatives is seeing first-hand how many of them are focused on so much more than just financial results. So many of the folks we connect with are focused on having a positive social impact on their community or the world at large. Can you talk to us about how you are helping the community?
Vibe Foods was formed by our Lone Tree family with a mission to bring clean healthy gluten and dairy free food to our community with a side of good vibes! We believe that food is medicine. Over 12 years ago, we finally discovered that our son’s health challenges from birth were connected to food. Thankfully, these issues were completely resolved with diet changes. Through this journey, we realized how important food choices are in establishing good health. We formed Vibe Foods in order to make healthy and delicious food accessible to our community. We are super picky about using the best nutritionally packed ingredients with zero chemicals or processed sugar. Our raw and cold pressed juices are 100% organic. The other pieces is that most of our food is vegan, we offer only a few items that contain animal products- like whey protein and our organic housemade bone broths. We are committed to source these products from animals that have been organically raised, fed a species appropriate diet (like the beef being 100% grass fed and finished), and have humanely handled. We are also uncompromising when it comes to sustainablility. We use only compostable/recyclable packaging, and engaged a commercial composter to turn our veggie scraps, cups, spoons, and straws into soil and fuel. The cost of expensive packaging made from plants can be tough to swallow, but it is absolutely core to our mission of loving our Earth. We have been ranked #1 for 18 months running for least diversion to the landfill, which is something we are proud of. We also work hard to keep our margins low as we want people to be willing to try something healthy- we want to break the association that health food is something to choke down. Our goal is for our customers to able to enjoy something incredibly delicious and leave feeling amazing! We feel that by voting with our dollar, and being uncompromising in our values, we are helping the community and the world move to a better place. We have the greatest team of employees, our Vibe Tribe, and it is so awesome to be able to offer food that makes our customers feel amazing!

Alright, so let’s move onto what keeps you busy professionally?
I was in commercial insurance for almost 24 years. I worked very hard, and ended up where I was the first and only female at the officer level at my final job. My husband and I have four children, and it was always challenging balancing work and family life, as he also had a stressful career. I finally hit a point where decided it was time to take a year off, as I was working 60 hours a week, and feeling like life was flying by. It was a huge decision, but during that year, our kids pushed us to open our Vibe Foods concept. I remember my daughter saying “Mom, if you don’t do it, think how you will feel when someone else does and it is not nearly as good as we would do it. ” I really did not know if I was brave enough to take something like this on as it was such a departure from what I knew so well. But we took a leap of faith and Vibe opened in 2017. We have since opened a second location in Memphis, TN that we signed the lease for 2 days before Covid hit. So it has been crazy trying to launch a new venture and build out a store with all that has been going on. And, while Covid has made everything really challenging, we are still hoping to open another location in the near future.

If you had a friend visiting you, what are some of the local spots you’d want to take them around to?
Hmmm . . . we are kind of boring, suburb dwellers- LOL. But, our in our neck of the woods we would definitely hit Sierra in Lone Tree (amazing view and cocktails) , Cranelli’s in Lone Tree (homestyle italian), Viet Pho in Lone Tree, Eddie Merlot’s (steakhouse) in Centennial for happy hour, Old Blinking Light (green chili is amazing) in Highlands Ranch, eat brunch at First Watch and Snooze, get chinese take out from Rice in Greenwood Village, and of course have coffee and breakfast at Vibe Foods everyday. We would also stroll around Park Meadows Mall – our visitors always want to go there and shop. We love the Bluffs Regional Park in Lone Tree, so would walk/hike/run there everyday- our favorite time is sunrise- and there are so many deer frolicking up there and the view is spectacular. We love Vail, so we would definitely head there for a stay at the Solaris or the Westin in Beaver Creek for a mountain fix.
