We had the good fortune of connecting with Carol Fisher and we’ve shared our conversation below.
Hi Carol, we’d love to hear more about how you thought about starting your own business?
My thought process behind starting my own small business first begins with doing something I love to do. I have always enjoyed cooking, growing up in a Mexican and Guatemalan family I have had the pleasure of enjoying a variety of flavors. I decided to pressure can my salsa about 20 years ago for gifts and slowly had people asking me to purchase my salsa. And that is the way my small business began, now I hope to one day open up a food truck and enjoy what I do full time 🙂


Can you give our readers an introduction to your business? Maybe you can share a bit about what you do and what sets you apart from others?
I decided to start selling my homemade salsa about 20 years ago, my business name is Carols-Kitchen and my salsa has is named “Salsa la Roca”, which Roca is my maiden name. I always had MILD and HOT salsa but about a year ago introduced my hottest version OH CHIT, this is how my mom pronounced it with her accent so it seemed perfect!
I am proud to be able to share a taste of my kitchen that my family enjoys with others. Working full time and having a business is not always easy, but if you enjoy what you do it is absolutely worth every minute. I have worn many hats in my life when it comes to working, and I have to say that working in the medical field and being a cook have been my favorite by far! I shared this passion with my mother and hope to one day have a food truck and share so many recipes that my mom taught me 🙂

If you had a friend visiting you, what are some of the local spots you’d want to take them around to?
When a friend is visiting us in Colorado I always take them to my favorite spots! Over a week span I would make sure we have a concert scheduled when they visit;
* Red Rocks is my absolute favorite for this, arrive early the day of the concert and enjoy some of the local breweries in Denver with amazing food trucks.
* Royal Gorge is next on my list, the scenery will take your breath away every time!
* Take a day to walk around Manitou and then head over to Phantom Canyon for beer, dinner and a few games of pool.
* Seven Falls is next! Have a nice appetizer at the new restaurant up there, I cannot recall the name, then head to Cerberus Brewing for great food and beer!
* Spend the rest of the time relaxing and fishing on the boat at 11 Mile or Pueblo Reservoir.
So much more to do, but that gives them reason to return and visit again!

The Shoutout series is all about recognizing that our success and where we are in life is at least somewhat thanks to the efforts, support, mentorship, love and encouragement of others. So is there someone that you want to dedicate your shoutout to?
My love for cooking & inspiration comes from my lovely mother, Maria Isabel Roca. She gave me the tools and taught me how to cook, she was the hardest worker I know and passed that on to me. She was always looking for entrepreneur opportunities and loved and enjoyed every moment of it. I love feeding people and seeing their smiling faces or when they do a little dance after tasting what I have created for them, I make every jar of salsa that I sell with the love my mother gave to me and that also goes into every meal that I create.
