We had the good fortune of connecting with Chuck Thomas and we’ve shared our conversation below.

Hi Chuck, what was your thought process behind starting your own business?
I was running restaurants for other people making them millions annually and they did not care for their employees. Did not want to pay a living wage or care about furthering the employees knowledge and life quality. I wanted to change the restaurant culture for employees as well as bring my unique style of cuisine to the food scene.

Alright, so for those in our community who might not be familiar with your business, can you tell us more?
My Business, Munchies Diner llc, has come to fruition through perseverance and dedication to my vision. That vision is to bring creative culinary dishes that are a Fusion of Americana and all types of worldly food. Such as our top sellers the Philly Cheesesteak Eggroll and Asian Persuasion Tacos. I started working in culinary field at 15 I am now 43 so I have many years of doing every position in a restaurant and that has made me a well rounded individual as far as restaurant operations goes. My wife worked for Walmart for over 21 years doing Cash Office operations, management and loss prevention, she handles the HR, Accounting and payroll. Together we run a successful business. We empower and educate our employees so they rise to every occasion and thrive in our environment. We pride ourselves in paying our employees a living wage and better so they can grow and thrive, even go start their own business! My wife is a native to Colorado Springs and I have lived here since I was 5 years old so we are so happy to have our business growing and thriving here.

Let’s say your best friend was visiting the area and you wanted to show them the best time ever. Where would you take them? Give us a little itinerary – say it was a week long trip, where would you eat, drink, visit, hang out, etc.
If my best friend cam back to town qe would go hike in the Garden of the God’s, spend a day in Manitou Springs eat at the Loop and have giant margaritas. Go have a great day in Pueblo at the river walk and grab some local food from the farms there especially green chili, maybe go on a boat at the Pueblo reservoir. Go to my restaurant one day and have a fre drinks and enjoy Munchies. Also spend time with family and play some card games! Maybe finish with a night gambling in Black Hawk CO at the casinos or just go for a long hike in the beautiful mountains !

Who else deserves some credit and recognition?
My father and step father were always cooking when I was a child so I developed a love for cooking. I studied art as a child and was encouraged by my mother to pursue my passion and a culinary profession is definitely an art form. My wife has supported me for 20 years and stood by my side through my past executive chef positions working 90 hours a week and countless stressful years. All of these people as well as all my CO workers made me what I am now, a owner of my own restaurant and food truck!
