Meet David & Charlotte Mondragon | Pueblo Charcuterie Owners

We had the good fortune of connecting with David & Charlotte Mondragon and we’ve shared our conversation below.
Hi David & Charlotte, can you walk us through the thought-process of starting your business?
First of all, thank you for inviting us to this interview. We are so honored to be on this platform. So to answer the question, we truthfully don’t think we had a very strategic thought process when we started Pueblo Charcuterie. When we began this business, we pretty much just threw ourselves out there. We made our first board for our family in 2020 for the holidays, and then we realized that we enjoyed making them. We didn’t really sit down and talk about it, we just took the risk. Charlotte and I, didn’t go over numbers or goals, which I know sounds very crazy, but sometimes you just have to take chances. Both of us just knew Pueblo needed new and innovative options. So that’s when “Pueblo Charcuterie” was born.

Can you give our readers an introduction to your business? Maybe you can share a bit about what you do and what sets you apart from others?
My father owns an auto repair shop here in Pueblo. I also help him manage & operate that. So, entrepreneurship has always been something that has captivated me. Although, my family already owns a business, I always knew that I wanted to start something from the ground up. My wife and I, have always been pretty creative and have an eye for anything that can be considered art. So when we began to do charcuterie, we felt like we were in our element. Charcuterie is art in the form of food. Charlotte, had attended culinary school for a few semesters, so she knew all the correct practices of working with food. We have always absolutely loved hosting, so we knew this was something we could enjoy doing while making some extra money. The process of officially establishing a food business wasn’t the easiest. We struggled with finding a local commercial kitchen for a long time. We finally located one and we knew this was the perfect opportunity to fully unleash the potential of this business. So, we’ve been doing it for some time, but this year—2023 is when it really blew up.
I think what sets us apart is our commitment to make the whole process of an order as smooth as possible. We take work ethic and professionalism very serious in our business. We ensure very quick communication and impeccable service from the moment you place your order up until the moment we deliver.
Although, we have worked very hard and diligently to get to where we are at today with our business, we are no where even close to where we have planned to get to. We have a lot of big & exciting plans for this business and we know that we can definitely accomplish them. We want to give back to Pueblo, with new and high quality catering options.
We want our company to not only be known for the incredible products we offer. We want our customers to plan their gatherings or simply a lunch with us on their minds and to think of us as an essential part of their functions.

Let’s say your best friend was visiting the area and you wanted to show them the best time ever. Where would you take them? Give us a little itinerary – say it was a week long trip, where would you eat, drink, visit, hang out, etc.
Pueblo is a hidden gem in southern Colorado. If you were to visit during the summer, I think the Pueblo Reservoir & Liberty Point would be the ideal picture perfect spot for sight seeing. During Autumn, Pueblo is a superb destination. You can literally smell Pueblo Chili in the air throughout the city during fall.
Any season is perfect for breakfast at B Street Cafe, lunch at Bingo Burger or Pass Key, quick snack at Sweet Ella’s & dinner downtown at Fuel & Iron Food Hall. To end off the day, a relaxing walk on The Historic Arkansas Riverwalk is an absolute must.
