Meet Katherine (katey) Griffin | Owner & Baker

We had the good fortune of connecting with Katherine (katey) Griffin and we’ve shared our conversation below.
Hi Katherine (Katey), what is the most important factor behind your success?
The most important factor behind my success is using quality ingredients. Using unbleached flour, cane sugar, organic and fresh ingredients help with flavor and nutrition.

Let’s talk shop? Tell us more about your career, what can you share with our community?
I am a baker and my art is cultivating elevated flavors with true recipes to set myself apart. My business is LGBTQIA+ and woman owned and operated. I own, bake, package, and sell everything myself. Expression through baking comes by evaluating potential flavor combinations. Instead of a blueberry muffin, pairing the tart and sweet of the blueberry with the floral of lavender has created a customer favorite. I also recognize the value of traditional recipes that bring everyone back to their childhoods with flavorful memories, such as my forty year old chocolate chip recipe that has been passed down through my family.
I am originally from Ohio where I had established a regular customer base and was continuing to expand before I moved to Colorado. Starting over in a new place was a huge challenge and I faced some trial and error determining what this area prefers for flavors and for products. Innovation was the biggest tool that I utilized to bring something unique to customers in Colorado. I realized this area seemed to be less drawn to muffins and I wanted to present my recipes in a new way. I created muffin sticks, which are muffins in a slender form making them easier to eat on the go and easier for children to hold to eat as well.
My main mission for my bakery is to provide quality products with the ability to adapt to customized requests for dietary and nutrition needs. I pride myself on making delicious vegan and gluten free recipes along side my usual recipes.

Any places to eat or things to do that you can share with our readers? If they have a friend visiting town, what are some spots they could take them to?
One of my favorite spots in my area would have to be on top of Pikes Peak and the drive up to it. It is a gorgeous drive and the view is spectacular. Of course I’m biased, I grew up on a farm so nature is my favorite place. My favorite restaurant would have to be Cheba Bar, my favorite bar would be Bar K especially on Tuesday nights when there is karaoke after dark. One of my favorite indoor places to visit here in Colorado so far would have to be Meow Wolf. It is such a fun experience and a must see.

The Shoutout series is all about recognizing that our success and where we are in life is at least somewhat thanks to the efforts, support, mentorship, love and encouragement of others. So is there someone that you want to dedicate your shoutout to?
My amazing partner, Katey deserves some credit. She has stood beside me through the hardest times of my life and supports my dreams. She encourages me to try new flavors and recipes and is always willing to try my newest creation. She is my rock and I honestly couldn’t have started my business without her support.
