We had the good fortune of connecting with Kollette Decker and we’ve shared our conversation below.

Hi Kollette, what matters most to you?
I value being authentic, having integrity, humility and never asking my staff to do something I’m not willing to do myself. If they clean bathrooms, I clean bathrooms. If they clean drains, I clean drains. I believe in leading from a place of example and integrity and humility. We don’t talk badly about each other or our competition, and we make sure we speak positively about each other, customers etc.

Alright, so for those in our community who might not be familiar with your business, can you tell us more?
I have managed coffee shops for years, but took a break to be a mom. When another business in town asked me to take over their space I prayed and felt it was the right time. So I started the process and about 6weeks in they had changed their mind so I decided to continue with my business plan. I found a brand new space and my passion was to bring Europe to castle rock. Our simple decor is what told find in a Scandanavian coffee shop, and may of our drinks are traditionally made. We even brought a drink in from Greece and it’s one of our best sellers!! We debated on the boba side and decided to keep that in the plans but focus more on the coffee side and have the boba as an added bonus. While boba is traditionally Asian we put our European spin on it and created a whole dessert drink series (think Crème Brûlée, Tiramisu, Chocolate Truffle and more! My favorite thing about our shop is we are dye free, and 90% gluten free: our entire drink menu IS gf as well as many of our pastries and eats, but we have a few pastries that are not. We make a lot of our own syrups, and the ones we don’t make we use a very high end brand that is super clean and doesn’t have junk and chemicals in it. I’m proud to serve drinks that people who normally can’t order something, can get it!! We even have a Vegan Crema (our version of cold foam but different and way yummier!) option for this who are dairy free but can’t usually get yummy cremas on their drinks.

I have a lot of food allergies and was tired of the same old thing of going somewhere and only getting a mediocre drink that either had dyes or junk or was very basic and boring.

Our espresso is the top of the lot and we are very proud of the quality of all of our items, and our matcha is hands down the best around. We were very intentional to pick ingredients and things you can’t find anywhere in town and that were of the highest quality. I’m very proud of that!!

Any places to eat or things to do that you can share with our readers? If they have a friend visiting town, what are some spots they could take them to?
There isn’t a lot to do in castle rock on a daily basis unless you eat out. Depending on the time of year I’d take them to festival park for a local concert, walk around downtown and grab dinner and a margarita at Dos Santos and of course Coffee or boba at LaLa’s.

The MAC is a great park for those with kids and offers the mini incline for those who love to exercise!

Who else deserves some credit and recognition?
There are several I owe a shout out to! My husband and family have been a massive emotional support, my consultant Autumn was so helpful in getting me started and has continued to be a huge support. My friend Luke who is my branding guy has done so much to give me the professional and consistent brand you see from my car to my website to my shop: and the support of my church, Plum Creek has blown my mind. They have been behind me from day 1 and I’m so grateful. I could keep going on! There’s too many!
