We had the good fortune of connecting with Stacy Szydlek and we’ve shared our conversation below.

Hi Stacy, what role has risk played in your life or career?
Risk is the difference between working for yourself or working for others. We chose to work for ourselves, and it was the biggest risk of our lives. Still is.

Alright, so for those in our community who might not be familiar with your business, can you tell us more?
We are most proud of the fact that we were able to buy the business as employees. The previous owners financed it, and we shocked them when we paid it off two years in advance. We were shut down due to covid 3 months after we purchased the restaurant. We did only take out for 18 months and somehow managed to survive. 5 years later and we have tripled the business.

Any places to eat or things to do that you can share with our readers? If they have a friend visiting town, what are some spots they could take them to?
Well to the Niwot Tavern of course, but for breakfast, the Garden Gate and Cimini’s are wonderful. We would have to hit up the Rock and Rails concert series at Whistlestop Park on Thursday. Then dance party on Friday right in front of the Tavern for Dancing Under the Stars! There is a different style dance every Friday. Dance lessons are provided at 6:30 and begins at 7! We would definitely be staying at the Niwot Inn, its gorgeous in there!

The Shoutout series is all about recognizing that our success and where we are in life is at least somewhat thanks to the efforts, support, mentorship, love and encouragement of others. So is there someone that you want to dedicate your shoutout to?
The town of Niwot deserves a shout out. We have an awesome community! I’m not sure we would have survived the pandemic without being established in this wonderful town.
