We had the good fortune of connecting with Grace Boudoin and we’ve shared our conversation below.

Hi Grace, what was your thought process behind starting your own business?
Starting Good Gracious Mobile Coffee was never just about coffee—it was about creating a space for connection, comfort, and community. The idea stemmed from my personal journey of finding joy and healing in the first house my husband and I bought in Mississippi, a place that became a symbol of warmth, healing, and belonging. When life circumstances landed me in Colorado Springs, I wanted to bring that same sense of home to others, and coffee felt like the perfect way to do it. I saw a need for more than just a caffeine fix (which is also important!) —people crave moments of kindness, familiarity, and shared stories.

I’ve always wanted to own and run my own business, inspired by watching my dad build and operate his own construction company. Growing up, I saw firsthand the dedication, resilience, and work ethic it takes to create something from the ground up and loved how he involved me and my siblings. He taught me the value of hard work, and that lesson stuck with me, plus it was fun to hang out with him!

If you had a friend visiting you, what are some of the local spots you’d want to take them around to?
Being new myself, this is a fun question! Friday night, we would absolutely be getting dinner at Red Gravy downtown. The carbonara is to die for! On our way back, we’d head to Ice Cream Lab because it’s a must-do, unforgettable experience! On Saturday morning, I would get coffee from KB Coffee and Bakery (and probably a cake pop too!) before heading to Garden of the Gods Market and Cafe for brunch. To work off some of that, I would go walk around Palmer Park or Garden of the Gods, as mainstream as they seem, they are a work of art if you’re not used to the mountains! For an afternoon pick-me-up I would see if Brewcha Matcha is setup somewhere for a little caffeine boost. For dinner Saturday night, I would get Slice420 pizza and watch the sunset or do Dos Santos for dinner and Frozen Gold for dessert! Sunday morning, we would head to Boulder Street Church for the 10am service and hit up Huevones outside of Bread + Butter downtown for lunch! After a Sunday nap, we’d probably hit up the pickleball courts at Bear Creek because the view is breathtaking, or head out to go fly fishing until the evening!

Who else deserves some credit and recognition?
First and foremost, I thank God for the grace to not just start this business but to keep it going as well. They said “if God gives you the business ideas, He’ll bring you the customers” and I have been continually in awe of the beautiful souls He has cross my path on a daily basis.

I couldn’t do this without my husband, Zac. He’s been there through the late nights, all the repair projects, and even taught me how to change the oil in the generator. He’s also saved me from more than a few sticky parking situations! More than that, he’s been my biggest encourager on the days when it felt like I wasn’t getting anywhere and success felt out of reach.

Next, my parents—who raised me to work hard, never be afraid to start something new, and to take pride in what I do. They always emphasized doing the right thing, no matter what, and that mindset has carried me so far in life and especially in business.

I’m also incredibly grateful for businesses like Rocco’s Mobile Food, who welcomed us with open arms from day one. They’ve answered countless questions—like, ‘HOW DO YOU GET THE BACK OF THE TRAILER TO GO WHERE YOU WANT IT???’—and have been a constant source of support. I’ll never forget the to-go box they gave us with a cannoli in it to commemorate our first day. I still have the to-go box.

And then there’s Amy with 4th Avenue Crepes. She is truly one of the most uniquely encouraging people I’ve ever met. Running a food business, especially as a woman in a predominantly male field, comes with challenges, and she absolutely kills it. Seeing her thrive while operating her business solo has been such an inspiration, especially on the days I need a little extra motivation.
